GREAT MUFFINS
1 mashed banana
1c apple sauce
1 c milk (I use coconut milk)
1/2 c oil (I use melted coconut oil)
1 t vanilla
2 1/2 c gluten free baking mix
2 t baking soda and baking powder
1 t salt
1 c cooked grain, like millet, brown rice, quinoa
1 plus cups frozen or fresh fruit , and nuts or ginger,
MIX ALL TOGETHER AND PUT INTO MUFFIN TINS FOR 30 MIN AT 350 DEGREES. Kids love them! I have even added mashed cooked beans for added nutrition and they were so good, like a great gingerbread recipe!
